Sopa de Fideo

I would like to share a delicious and easy recipe with you, sopa de fideo, which really just means pasta soup. It is a traditional dish in Mexico is normally served as a meal starter or as a light meal. It is so good! The traditional recipes call for chicken broth or chicken bouillon cubes, but it is just as good with out the added chicken flavor!


4 roma tomatoes, chopped

½ medium onion, chopped

1 garlic clove minced

1 TB olive oil

1 package (7-8 ounces) Vermicelli Pasta

3 cups water

Salt, to taste


-Blend the tomatoes, onion, and onion together until a smooth sauce is formed

-Heat oil in a pan or soup put. Add pasta and stir until it is lightly toasted. If you don’t keep an eye one the pasta, it will burn.

-Once the pasta is toasted, add the tomato mixture. It will sizzle. You can strain the tomato sauce if you would like to, but I don’t usually do that.

-Add the water and bring to a boil. Once boiling lower the heat to medium-low and cook about 10 minutes, or until the pasta is tender.
Add salt to taste.
